For the Pudding:
- 1/4 teaspoon vanilla extract
- 1/2 cup uncooked basmati or jasmine rice
- 2 cups whole milk (or plant-based milk)
- Zest of 1 orange
- 1/4 cup sugar or honey
- 1/4 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1 cup coconut milk
Steps:
- Cook the Rice: Rinse the rice under cold water. In a medium saucepan, combine rice, whole milk, and coconut milk. Bring to a boil, then reduce heat to low and simmer uncovered, stirring occasionally, until the rice is tender and the mixture thickens (about 25-30 minutes).
