Looking for a comforting, hearty meal that practically cooks itself? This Crockpot Cheesesteak Potato Casserole brings together all the savory flavors of a classic cheesesteak sandwich in a rich, creamy casserole form.
Perfect for busy weeknights or when you want to impress without the fuss, this dish will quickly become a family favorite.
Ingredients:
- 2 pounds thinly sliced beef sirloin or ribeye steak
- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 1 (32-ounce) bag frozen diced potatoes
- 2 cups shredded provolone cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Directions:
Begin by browning the thinly sliced beef in a large skillet over medium-high heat. Once the beef is browned, add the sliced onion, green bell pepper, red bell pepper, mushrooms, and minced garlic. Cook the mixture until the vegetables are tender and the beef is fully cooked. Stir in Worcestershire sauce, and season with salt and pepper to taste.
Next, grease the crockpot insert with cooking spray. Place half of the frozen diced potatoes in the bottom of the crockpot, then top them with half of the cooked beef and vegetable mixture. Sprinkle half of the shredded provolone cheese over the beef and vegetables. Repeat these layers with the remaining potatoes, beef, vegetable mixture, and provolone cheese. Finally, sprinkle grated Parmesan cheese on top.
Cover the crockpot and cook the casserole on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender and the cheese is melted and bubbly.
Before serving, garnish the casserole with chopped fresh parsley for a pop of color and freshness.
Extra Tips:
- For a twist, substitute the provolone with a sharp cheddar or a mix of cheeses for added depth of flavor.
- Adding a few dashes of hot sauce or some sliced jalapeños can give the dish a spicy kick.
- This casserole tastes even better the next day, so save those leftovers for a delicious, easy reheat.
