Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup whipped cream
  • 1 cup sliced fresh strawberries
  • 2 cups crushed graham crackers
  • 1 cup strawberry crunch topping (store-bought or homemade)

Instructions:

  1. Prepare the Crust: In a large bowl, combine the crushed graham crackers and melted butter. Mix until fully combined and press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes to set.
  2. Make the Cheesecake Filling: While the crust chills, beat the softened cream cheese until smooth. Gradually add powdered sugar and continue to beat until fully incorporated.
  3. Fold in Whipped Cream: Add vanilla extract and gently fold in the whipped cream until the mixture is light and creamy.
  4. Assemble the Cheesecake: After the crust has set, pour the cheesecake mixture over it, smoothing the top with a spatula.
  5. Top with Strawberries and Crunch: Layer the sliced strawberries evenly over the cheesecake and generously sprinkle the strawberry crunch topping on top for an extra crunch.
  6. Chill the Cheesecake: Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the cheesecake to set.
