Garlic Chicken and Broccoli Pasta with Cheesy Cream Sauce

Ingredients:

For the Pasta:

  • 8 oz pasta (penne or fettuccine)
  • 2 cups broccoli florets

For the Chicken:

  • 2 chicken breasts, diced
  • 2 tbsp olive oil
  • Salt and pepper, to taste

For the Sauce:

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For Garnish:

  • Fresh parsley, chopped

Directions:

  1. Cook the Pasta and Broccoli: Boil pasta according to package instructions. In the last 3-4 minutes, add broccoli to the pot. Drain and set aside.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Season diced chicken with salt and pepper. Cook until browned and cooked through. Remove chicken from skillet.
  3. Make the Sauce: In the same skillet, sauté garlic until fragrant. Add heavy cream, chicken broth, and bring to a simmer. Stir in mozzarella and Parmesan cheese until melted and smooth.
  4. Combine: Add cooked pasta, broccoli, and chicken to the skillet. Toss to coat in the creamy sauce.
  5. Serve: Garnish with fresh parsley and serve warm.
