Ingredients:

  • 1/4 cup maple syrup
  • 6 slices thick-cut bacon, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 tablespoon balsamic vinegar

Instructions:

  1. Preheat Oven: Preheat oven to 425°F (220°C).
  2. Prepare Brussels Sprouts: Toss Brussels sprouts with olive oil, honey, salt, and pepper. Spread on a baking sheet.
  3. Cook Bacon: Place bacon on a separate baking sheet.
  4. Roast: Roast Brussels sprouts and bacon in preheated oven for 20-25 minutes, or until Brussels sprouts are tender and bacon is crispy.
  5. Make the Glaze: In a small bowl, whisk together maple syrup, Dijon mustard, balsamic vinegar, and red pepper flakes.
  6. Combine and Serve: Toss roasted Brussels sprouts and bacon with the glaze. Serve immediately.
