Slow Cooker French Onion Swiss Meatloaf

Ingredients:

  • 2 eggs
  • 1 cup breadcrumbs
  • ½ cup chopped onions
  • Salt & black pepper (to taste)
  • 1 packet French onion soup mix
  • ¼ cup milk
  • 2 lbs ground beef
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded Swiss cheese (plus extra for topping)
  • ½ cup ketchup (optional)

Instructions:

  1. In a large bowl, combine ground beef, soup mix, breadcrumbs, eggs, milk, Swiss cheese, onions, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into a firm loaf and place it in the bottom of the slow cooker.
  3. If desired, spread ketchup evenly over the top of the meatloaf.
  4. Cover and cook on Low for 6 hours, until fully cooked and the internal temperature reaches 160°F (71°C).
  5. About 15 minutes before serving, sprinkle extra Swiss cheese over the top. Cover again until melted.
  6. Carefully remove the meatloaf using two spatulas and let it rest for 5 minutes before slicing.
  7. Slice, serve warm, and enjoy.
