Delicate, buttery, and perfectly crisp, these shortbread biscuits require only three ingredients and come together effortlessly. Perfect for any occasion or an afternoon snack!

Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour

Directions:

  1. Prepare the Dough:
    • In a large mixing bowl, cream the butter and sugar together until light and fluffy—about 2–3 minutes.
    • Gradually add the flour, mixing until the dough just comes together.
    • The dough will be slightly crumbly but should hold when pressed.
  2. Chill the Dough:
    • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
    • This helps the dough firm up and makes it easier to handle.
  3. Preheat the Oven:
    • Preheat your oven to 325°F (165°C).
    • Line a baking sheet with parchment paper.
  4. Shape the Biscuits:
    • Roll out the chilled dough on a lightly floured surface to about 1/4-inch (0.6 cm) thickness.
    • Cut into shapes using a cookie cutter or simply slice into rectangles.
    • Place them on the prepared baking sheet about 1 inch apart.
  5. Bake:
    • Bake in the preheated oven for 12–15 minutes, or until the edges are just starting to turn golden.
    • Be careful not to overbake; they should still be pale.
  6. Cool and Serve:
    • Allow the shortbread to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
    • Enjoy with tea, coffee, or a glass of milk!

Tips:

  • For a festive touch, sprinkle the tops with granulated sugar before baking.
  • Add a dash of vanilla extract or a bit of lemon zest for extra flavor.
  • Drizzle with melted chocolate for a luxurious finish.

Storage:

  • Store in an airtight container at room temperature for up to 1 week.
  • They also freeze well for up to 1 month.
