🍋🍰 Just baked these delightful Homemade Lemonies! They strike the perfect balance between sweet and tart, with a lemon glaze that adds a refreshing touch. These lemonies are sure to be a hit at any gathering or as a treat for yourself!
Ingredients
For the Lemonies:
1 cup all-purpose flour
¾ cup sugar
¾ cup (1 ½ sticks) unsalted butter, melted and cooled
¼ cup lemon juice
2 large eggs, room temperature
1 tablespoon lemon zest
1 teaspoon vanilla extract
¼ teaspoon baking powder
¼ teaspoon salt
For the Glaze:
1 ¾ cups powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract (optional)
Directions
Preheat your oven to 350ºF and line a 9×9-inch baking dish with parchment paper or aluminum foil.
In a large bowl, whisk together the flour, sugar, lemon zest, baking powder, and salt until well combined.
Mix in the melted butter, lemon juice, eggs, and vanilla extract, stirring until just incorporated.
Pour the batter into the prepared baking dish and bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool.
While the lemonies are cooling, prepare the glaze by whisking together the powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
Pour the glaze over the cooled lemonies and garnish with additional lemon zest if desired. Enjoy!
