Ingredients

  • 4 slices sandwich bread
  • 1 tablespoon butter, softened
  • 1 tablespoon Dijon-style mustard
  • ¼ cup shredded cheddar cheese
  • 5 ounces brie cheese, sliced
  • 1 medium apple, thinly sliced
  • 2 tablespoons fresh thyme leaves

Instructions

  1. Lay the bread slices on a flat surface. Spread butter on one side of each slice. Flip the slices over and spread Dijon mustard on the unbuttered sides.
  2. On two slices of bread, layer the shredded cheddar, sliced brie, apple slices, and thyme leaves. Top with the remaining bread slices, buttered side facing outward.
  3. Heat a skillet over medium heat. Place the sandwiches in the pan and cook for 3–5 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is fully melted.
  4. Remove from the skillet, slice in half, and serve hot.
