This delicious dish combines earthy mushrooms, creamy spinach, and irresistible layers of cheese. Perfect for a cozy family dinner or impressing guests!


Ingredients

For the Layers:

  • No-cook lasagna sheets (enough for 3-4 layers in an 8×8-inch baking dish)
  • 1 ½ cups cottage cheese or ricotta
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (optional)
  • ½ cup shredded cheddar cheese (optional, for an extra kick)

For the Filling:

  • 8 oz fresh mushrooms, sliced (e.g., button or cremini)
  • 1 cup frozen spinach, thawed and well-drained
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil (or butter for a richer flavor)
  • 1 teaspoon Italian seasoning (or a mix of oregano, basil, and thyme)
  • Salt and black pepper, to taste

For the Sauce:

  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup milk
  • A pinch of nutmeg (optional, for a warm, cozy flavor)

Instructions

1: Prepare the Filling

  • Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic for 3 minutes until softened.
  • Add the mushrooms, season with salt and pepper, and cook for 5-7 minutes until they release their moisture.
  • Stir in the spinach and Italian seasoning. Cook for another 1-2 minutes, then set aside.

2: Prepare the Sauce

  • In a bowl, mix the cream of mushroom soup, milk, and nutmeg (if using). Stir until smooth.

3: Assemble the Lasagna

  1. Preheat the oven to 340°F (170°C).
  2. Spread a thin layer of sauce at the bottom of the baking dish to prevent sticking.
  3. Place a layer of lasagna sheets.
  4. Add a layer of mushroom-spinach filling, followed by dollops of cottage cheese or ricotta.
  5. Sprinkle with mozzarella and Parmesan cheese. Drizzle a little sauce on top.
  6. Repeat the layers, finishing with a generous layer of sauce and cheese on top.

4: Bake the Lasagna

  • Cover the dish with foil, tenting it slightly to avoid touching the cheese, and bake for 25 minutes.
  • Remove the foil and bake for an additional 8-10 minutes until the top is golden and bubbly.
  • For a crispy top, broil for 1-2 minutes, watching carefully to avoid burning.

5: Let It Rest

  • Allow the lasagna to rest for 8-10 minutes before slicing to let the layers set.
