Crispy Ginger Beef Rolls with Cranberries & Walnuts

Ingredients:

  • 1/4 cup chopped walnuts
  • 1 pound ground beef
  • 1 tablespoon chili oil
  • 1/4 cup shredded mozzarella
  • 1 teaspoon sesame oil
  • 1/4 cup dried cranberries, chopped
  • 2 garlic cloves, minced
  • 1/4 cup finely shredded carrots
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • 1–2 inches fresh ginger, grated
  • 8–10 egg roll wrappers
  • Cooking oil for frying

Sweet Chili Sauce:

  • 1/2 cup rice vinegar
  • 1 tablespoon flour
  • 1/4 cup honey
  • 1/4 cup water
  • 3 garlic cloves, grated
  • 2 teaspoons crushed red pepper flakes
  • 1/4 cup granulated sugar
  • 1 teaspoon paprika
  • 1/2 tablespoon water

Instructions:

  1. Heat olive oil in a skillet and cook the ground beef until browned. Add garlic, ginger, chili oil, honey, and sesame oil; cook for 2 minutes.
  2. Stir in carrots, cranberries, walnuts, and parsley. Remove from heat and let cool slightly.
  3. Once warm (not hot), mix in the mozzarella cheese.
  4. Spoon filling onto egg roll wrappers, moisten edges, fold tightly, and roll closed.
  5. Heat frying oil to 350°F (175°C). Fry rolls for 3–5 minutes until golden.
  6. Drain on paper towels.
  7. In a saucepan, heat sugar, honey, and water until bubbling.
  8. Whisk flour with water, then add to the pan along with vinegar, garlic, red pepper flakes, and paprika.
  9. Simmer for 8–10 minutes until the sauce thickens.
  10. Serve the rolls hot with the sweet chili sauce.
