This straightforward recipe allows you to create tangy, sweet pickles right in your kitchen, without the fuss of traditional canning.

With just a few ingredients and a bit of patience, you can enhance your sandwiches and snacks with a delightful pickle crunch.

Ingredients:

  • 7 pickling cucumbers
  • 1 white onion
  • 3 tablespoons kosher salt
  • 1 cup brown sugar
  • 1 cup white vinegar
  • ½ cup apple cider vinegar
  • 2 teaspoons celery seeds
  • 2 teaspoons mustard seeds
  • ½ teaspoon red pepper flakes

Instructions:

Begin by slicing the cucumbers and onion into thin, even slices. This ensures each pickle slice is flavorful and consistent.

In a large bowl, toss the cucumber and onion slices with kosher salt. Cover and refrigerate for at least 1 hour. This process helps draw out excess moisture from the cucumbers, keeping the pickles crisp.

After chilling, transfer the cucumber and onion slices to a colander and rinse thoroughly to remove the salt. Drain well and return the vegetables to the bowl.

Prepare the pickling solution by combining brown sugar, white vinegar, apple cider vinegar, celery seeds, mustard seeds, and red pepper flakes in a small saucepan. Heat over medium-high heat, stirring constantly until the sugar dissolves completely. This solution will give your pickles a perfect blend of sweetness and tanginess.

Pour the warm pickling solution over the cucumbers and onions in the bowl. Allow it to cool to room temperature before covering and refrigerating for at least 24 hours. This resting time lets the flavors meld and intensify.

After 24 hours, your Refrigerator Bread and Butter Pickles are ready to enjoy! Serve them with sandwiches, burgers, or salads for a crunchy and flavorful touch. These pickles will stay fresh in the refrigerator for up to two months, though they might not last that long!
