Ingredients:
- 1 teaspoon orange zest
- 1 1/2 teaspoons honey
- 1 tablespoon rosemary, finely chopped
- 1 1/2 teaspoons olive oil
- 10 ounces pitted Medjool dates, sliced open on one side
- 3 ounces feta cheese, sliced into 1-inch pieces
- 1/4 teaspoon salt
- 3/4 cup shredded Parmesan cheese
- 2 tablespoons chopped parsley (or arugula)
- 2 tablespoons scallions
- 1/3 cup walnuts, finely chopped
- Honey, for drizzling
- Pepper, to taste
Instructions:
- Preheat the Oven
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. - Prepare the Dates
Carefully slice open each Medjool date, removing the pit, but leaving the date intact for stuffing. - Stuff the Dates
Fill each date with a piece of feta cheese, followed by a sprinkle of chopped walnuts, scallions, and rosemary. Top with shredded Parmesan cheese. - Drizzle with Olive Oil & Honey
Place the stuffed dates on the prepared baking sheet. Drizzle the stuffed dates with olive oil and a touch of honey. Sprinkle with salt and pepper to taste. - Roast the Dates
Place the baking sheet in the oven and roast for 10-12 minutes, until the dates are softened and the cheese is melted and slightly golden. - Finish and Serve
Remove the dates from the oven, drizzle with additional honey, and sprinkle with chopped parsley or arugula and orange zest. Serve as a delightful appetizer or snack.
